These Vegan Funfetti Sugar Cookies are irresistible. Funfetti was always my favorite flavor of anything growing up – funfetti birthday cake, funfetti frosting, and of course funfetti cookies. So, I couldn’t resist making a vegan version.

This recipe went through many iterations until I finally landed on the perfect balance of chewy inside, crispy edges, and just the right amount of sweetness.

    Ingredients

      • Flour – I used all-purpose flour, but you can replace it with a 1:1 gluten-free baking flour if desired.
      • Sugar – Regular granulated white sugar is my preference for most baking. If you want to make these refined sugar-free, you could try subbing 1/2 the amount of maple syrup or agave as a sweetener.
      • Plant milk – I used oat milk for these, but any plant milk will work!
      • Oil – Canola oil is typically my choice for baking, but any neutral-flavored oil will work.
      • Sprinkles! – Choose your favorite! Just make sure to check that they are vegan and free of any other allergens you may need (gluten, nuts, etc.).
      • Vanilla extract – Just 1 tsp helps to round out the flavors in this cookie, but you can do without if you want!
      • Baking basics – baking soda, baking powder, and salt are staples in most cookie baking.

      How to Make Vegan Funfetti Sugar Cookies

      Preheat your oven to 350 degrees Fahrenheit and line a baking sheet with parchment paper.

      Making Vegan Sugar Cookie Dough

      This simple dough is really just the best vegan sugar cookie recipe.

      In a large mixing bowl, add the oil, sugar, plant milk, and vanilla extract. Mix until the sugar begins to dissolve.

      Add the flour, baking powder, baking soda, and salt and mix until the dough is cohesive. It should be wet enough to form into balls of dough, but not too wet that it sticks to your fingers.

      Finally, add in the sprinkles and fold them in. The color in the sprinkles will begin to run if you mix too much during this step, so just a few folds should do the trick!

      Portion the Cookies

      Using a cookie scoop or spoon, portion equal-sized balls of dough and place them onto a parchment-lined baking sheet. These cookies will spread a bit, so make sure the baking sheet has enough space for them to be about 3-4 inches apart.

      Time to Bake

      Bake at 350 degrees Fahrenheit for 13-16 minutes. Shorter cooking times will result in a chewier cookie, while longer times will yield a crispier cookie. It is totally up to your preference!

      Remove the cookies and allow them to cool on the baking sheet for at least 5 minutes. They will continue to firm up while they cool.

      How to Store Vegan Funfetti Sugar Cookies

        • Room Temp: These cookies will last 5-7 days when stored at room temp in an air-tight container. Just make sure they are completely cooled before storing, otherwise moisture may collect in the container, making the cookies mushy and reducing storage time overall.
        • Fridge: You can make this dough ahead of time and store covered in the fridge for up to 24 hours before baking. You don’t need to let it come to room temp before portioning and baking, just go for it!
        • Freezer: You can freeze the finished cookies for up to 3 months for the best flavor. Or, you can make the dough and freeze the individual portioned balls of dough to thaw and bake later!

          • Not Vegan? If you don’t need these to be dairy-free sugar cookies, you can replace the oil with melted butter, or use dairy milk instead of plant milk.
          • Gluten-Free? This recipe makes the BEST gluten-free vegan sugar cookie. Just make sure your sprinkles are gluten-free and substitute for a 1:1 gluten-free baking flour.
          • Oil-Free? Replace the oil with equal parts applesauce. This will make a slightly fluffier/cakier texture, but just as delicious!
          • Refined Sugar-free? Replace the sugar with 1/2 the amount of maple syrup or agave. You may have to add a touch more flour if the dough is too wet.

          • Using a cookie scoop or spoon, portion the dough into 12-15 balls and place on a parchment-lined baking sheet.
          • Bake at 350 F for 13-16 minutes or until the cookies are slightly golden brown.
          • Let cool on the baking sheet. Enjoy!
