  1. Preheat the oven to 350 degrees Fahrenheit.
  2. In a large mixing bowl, add the oil, plant milk, vanilla extract, and sugar. Mix until the sugar begins to dissolve.
  3. Add in the flour, baking soda, baking powder, and salt. Mix until the dough is cohesive enough to form balls, but not too wet.
  4. Add in the sprinkles and fold into the dough until evenly incorporated.
  5. Using a cookie scoop or spoon, portion the dough into 12-15 balls and place on a parchment-lined baking sheet.
  6. Bake at 350 F for 13-16 minutes or until the cookies are slightly golden brown.
  7. Let cool on the baking sheet. Enjoy!

Notes

  1. Not Vegan? Replace the oil with melted butter, or use dairy milk instead of plant milk.
  2. Gluten-Free? This recipe makes the BEST gluten-free vegan sugar cookie. Just make sure your sprinkles are gluten-free and substitute for a 1:1 gluten-free baking flour.
  3. Oil-Free? Replace the oil with equal parts applesauce. This will make a slightly fluffier/cakier texture, but just as delicious!
  4. Refined Sugar-free? Replace the sugar with 1/2 the amount of maple syrup or agave. You may have to add a touch more flour if the dough is too wet.
