These Roasted Cauliflower Steaks are a nice change from your classic steamed cauliflower dishes. Marinated in tons of delicious spices, these “steaks” use my copycat version of Montreal Steak Seasoning spice mix for a meat-reminiscent flavor.
Why I Love this Recipe
- Super easy – Seriously all you have to do is slice the cauliflower, apply the spices, and roast.
- Customizable – You are not limited to the spices I use! Pick and choose your favorites or try another one of my spice mixes like my homemade taco seasoning.
- Side or main – This dish is hearty enough to be the main event, but it is also the perfect complement to any meal.
Ingredients
- Cauliflower – Try to find a large head of cauliflower so you can get more steaks out of one.
- Olive Oil – Any oil works!
- Montreal Steak Seasoning – I use my own recipe for this to ensure it is vegan, but you could find a store bought seasoning or mix your own spices!
How to Make Roasted Cauliflower Steaks
Preheat your oven to 400 degrees and line a large baking sheet with parchment paper.
Prep the Spices
First, mix all of your spices with the olive oil to create a paste. Set this aside for later.
Prep the Cauliflower
Remove the large outer leaves of the cauliflower and cut off the last 1-2 inches of the stem, leaving most of it intact. This will help the steaks stay together better once sliced.
Starting from the middle of the cauliflower, make slices from the top toward the stem at about 1.5-inch increments.
Carefully place the slices on the parchment-lined baking sheet.
Spice it up
Spread the spice-oil paste in a thick, even layer using a brush all over the cauliflower slice. Use the bristles to dab into the inner stems of the cauliflower.
You can choose to just coat one side, or flip and coat both sides. I usually just do one side for ease and because I have not noticed a difference in flavor in just doing one side versus both.
Time to Roast
Place the baking sheet in the oven at 400 degrees Fahrenheit for 25-30 minutes or until the thickest stem of the cauliflower is fork-tender.
Serve and enjoy!
How to Store Roasted Cauliflower Steaks
- Make Ahead: You can coat the raw cauliflower in the oil and spice mix and refrigerate for several hours before roasting.
- Fridge: Store for up to 5 days in the refrigerator.
More Tips to Make Roasted Cauliflower Steaks
- Not Vegan? Top these cauliflower steaks with cheese or include chicken salt in your spice mix. Not surprisingly, this Montreal Steak Seasoning is great on steak (and chicken)!
- Want more protein? Add 1 tbsp tahini to the spice and oil mixture before coating the cauliflower. You can also use the tahini to replace the oil to make this recipe oil-free.
