This Golden Beet Salad with Vegan Whipped Feta Dip is the perfect combination. This dish is as delicious as it is gorgeous. Golden beets are an underappreciated vegetable in my opinion. They have a full and earthy flavor like their red counterpart, but they are a bit sweeter, making them a delicious addition to any dish.

Ingredients for Golden Beet Salad with Vegan Whipped Feta Dip

  • Golden Beets – Golden beets are the lesser known cousin to traditional red beets, but they are my personal favorite. They are pretty easy to find in most grocery stores, especially during the spring when they are in peak season.
  • Red Beets – I love to pair the golden beets with these colorful red beets, but you can certainly make this salad with all golden OR all red beetroot if desired.
  • Salt & Pepper – Just a bit is needed to make the flavors of the beets pop.
  • Parsley – Fresh or dried parsley serves as the perfect garnish for this beetroot salad.
  • Whipped Feta Dip – For this dish I use my Whipped Feta Dip recipe. You can also just use plain Vegan Feta Crumbles with a delicious result.

How to Make Golden Beet Salad with Vegan Whipped Feta Dip

Cook the Beets

There are many ways to cook beets. I have chosen to use my Instant Pot for this recipe, but if you don’t have one of those, check out Feel Good Foodie’s excellent explanation of several other ways to cook beets.

Too cook beets in the Instant Pot, first you will want to rinse and scrub the beets to remove ant remaining dirt. Chop off the ends and roots. Place the beets in the instant pot on the metal roasting rack and add 1 cup of water to the bottom of the pot.

For beets that are 2 inches in diameter, the cooking time will be 20 minutes. You can either increase your cooking time for larger beets, or chop them into roughly 2″ sized pieces.

Note: Cooking the red and golden beets together will cause the golden beets to take on the color of the red beets, so I cooked these beets separately. If you don’t care about the color bleeding (it is just an aesthetic preference), you can cook them all together and cut the cooking time in half.

Cool the Beets

Once the beets have cooked, carefully remove them and let them cool 5 minutes before handling.

Once cool enough to touch, use the edge of a dinner spoon to scrape along the side of the beet to remove the peel.

Once all peels are removed, chop to desired size, place in an air tight container and put the container in the fridge to cool for 50-60 minutes.

Make the Vegan Whipped Feta Dip

You can find detailed instructions on making the Whipped Feta Dip here. A brief summary is as follows:

Combine the vegan feta, olive oil, lemon juice, spices, and oat milk in a blender and pulse until desired consistency is achieved.

Bring it All Together

Once the beets have cooled, place them atop a bed of vegan whipped feta dip and sprinkle with salt, pepper, and parsley. You can also drizzle the vegan feta dip on top of the beets if you prefer.

How to Store Golden Beet Salad with Vegan Whipped Feta Dip

  • Fridge: You’ll want to store the beets and the whipped feta dip separately in air tight containers. The beets will store up to 3 days and the feta dip will last 3-5 days.

More Tips for Making Golden Beet Salad with Vegan Whipped Feta Dip

  • Not Vegan? Use real feta cheese in the feta dip, or sprinkle real feta chunks on top of the beets instead. I bet this salad would also taste great with bleu cheese or gorgonzola sprinkled atop if you don’t have feta.
  • Gluten-free? As long as you have chosen gluten-free ingredients for the feta dip, you are good to go!
  • Can’t find golden beets? This salad works perfectly using all red beets too!

Equipment

Ingredients

For the Beet Salad

  • 3 large golden beets
  • 2 large red beets
  • ½ tsp salt
  • ¼ tsp fresh cracked black pepper
  • 1 tsp Parsley

For the Vegan Whipped Feta Dip

  • 3 oz Vegan Feta
  • 1 tbsp olive oil
  • 1 tsp lemon juice
  • ½ tsp salt
  • ¼ tsp fresh cracked black pepper
  • 1 tbsp minced garlic
  • 1 tbsp dried oregano
  • 2 tbsp oat milk

Instructions

Making the Beet Salad

  • Rinse and scrub beets, removing all dirt. Chop the root end and greens off.
  • Chop beets into approximatelt 2 inch diameter sized pieces.
  • Place the beets into the pressure cooker with 1 cup of water. Cook on high pressure for 20 minutes.
  • Note: Cook the different colored beets separately to avoid colors running if desired.
  • Remove the beets and allow to cool 5 minutes before handling.
  • Use the edge of a dinner spoon to remove the beet skins, then chop the beets to the desired size.
  • Place the chopped beets into an air tight container and place in the fridge to cool for 1 hour.

Making the Vegan Whipped Feta Dip

  • Add all ingredients into a blender and pulse until desired consistency is achieved.
  • Spoon 2 tbsp of the feta dip onto a plate and place 1/4 of the beets on top.
  • Sprinkle with salt, pepper, and parsley.
  • Serve and enjoy!

Notes

  1. Not Vegan? Use real feta cheese in the feta dip, or sprinkle real feta chunks on top of the beets instead. I bet this salad would also taste great with bleu cheese or gorgonzola sprinkled atop if you don't have feta.
