Maple Roasted Carrots

These maple roasted carrots are a simple, easy side dish, but a total crowd-pleaser. Perfect side dish for holiday meals or the average Tuesday night. This is my favorite way to use up extra carrots from the fridge, and with just a handful of ingredients and no special equipment needed, anyone can make this easy recipe!

These carrots are reminiscent of honey-glazed carrots, but they use maple syrup as the sweetener instead.

Ingredients

  • Fresh carrots – I prefer to use full-size carrots, but you could easily use baby carrots. Just watch the baking time.
  • Maple syrup – A little goes a long way in this recipe. Carrots already bring their own natural sweetness to this recipe. Just make sure to use pure maple syrup, as the maple-flavored syrups tend to burn.
  • Extra virgin olive oil – Any oil of your choice works, or swap for melted vegan butter. Omit for oil-free maple roasted carrots.
  • Salt – Just 1 tsp makes the flavors pop.
  • Cinnamon – Feel free to use more or less to your liking!
  • Optional: Fresh herbs, lemon juice, or lemon zest to sprinkle on top!

How to Make

Preheat the oven to 400 degrees Fahrenheit.

Prep the Carrots

Start by washing and peeling the carrots. You can leave the carrots whole or chop them to evenly-sized pieces. This is just personal preference, but note that it may change the baking time. 

Mix with Seasonings

Place the carrots in a large mixing bowl and add the maple syrup, olive oil, salt, and cinnamon. Mix until all pieces are evenly coated.

You can either cook these carrots right away or cover them and allow them to marinate for up to 2 hours in the fridge. The cooking time will not change.

Oven Roasted Carrots

When you are ready to cook them, place the carrots in a single layer on a large, parchment-lined baking sheet. Bake for 30 minutes, or until you can easily pierce the largest carrots with a fork.

Air Fryer Directions

To make this recipe in the air fryer, just place the carrots in a single layer and air fry at 400° Fahrenheit for about 20 minutes. I would suggest checking after 10 minutes, as every air fryer is different!

Sprinkle with some fresh or dried herbs and a little salt and black pepper, and you’re good to go! Enjoy!

How to Store 

  • Fridge: Serve these right away or store them in the refrigerator in an airtight container for up to 1 week. Enjoy!

Variations

  • Marinate the carrots in liquid smoke for a savory addition to this recipe.
  • Add sliced red onions, red bell pepper, or green beans to the baking sheet for a roasted vegetable medley.
  • Sprinkle fresh parsley or fresh dill on top of the carrots before serving.

FAQ

Can I make this recipe with other root vegetables?

You bet! This recipe would be delicious with parsnips, rainbow carrots, sweet potatoes, or any other veggies you like. Just be mindful of the required cooking times. 

What can I use instead of maple syrup?

You can swap any liquid sweetener (agave, brown rice syrup, etc.) with maple syrup. Or swap with brown sugar for a sweeter taste. 

Can I make this recipe on the stove?

Yes! Marinate the carrots in all of the spices, maple syrup, and oil. Then cook in a large skillet over medium-high heat until the carrots are fork tender.

  3. Leave carrots whole or chop carrots into thirds, then cut larger pieces in half length-wise.
  4. Place all carrots into a large mixing bowl. Toss in olive oil, maple syrup, cinnamon, and salt.

  6. Bake at 400° for 30 minutes.
