Maple Roasted Carrots

These maple roasted carrots are the perfect side dish to compliment to any fall meal. Only five ingredients and ready in under an hour!

These maple roasted carrots are a simple, easy side dish and a total crowd-pleaser. Perfect as a holiday side or the average Tuesday night. This is my favorite way to use up carrots from the fridge, and with just five ingredients, and no special equipment needed, anyone can make this recipe!

These carrots are reminiscent of honey glazed carrots, but use maple syrup as the sweetener instead.

 

Why I Love this Recipe

  • Easy prep – Just peel and chop your carrots and mix the spices and you’re good to go!
  • Go big or stay home – If you are serving a crowd, you can scale this recipe up and make multiple servings in the oven at one time. OR make fewer servings and use the air fryer for an even quicker side!

Ingredients for Maple Roasted Carrots

  • Carrots – I prefer to use full-size carrots and chop them, but you could easily use baby carrots and save yourself the chopping time.
  • Maple syrup – A little goes a long way in this recipe. Just make sure to use pure maple syrup, as the maple-flavored syrups tend to burn.
  • Olive Oil – Any oil of your choice works.
  • Salt – Just 1 tsp makes the flavors pop.
  • Cinnamon – Feel free to use more or less to your liking!

 

How to Make Maple Roasted Carrots

Preheat the oven to 400 degrees Fahrenheit.

Prep the Carrots

Start by washing and peeling the carrots. Chop off the ends, then cut the carrots into thirds. Cut the thicker pieces in half length-wise so that most pieces are roughly the same size, as shown below.

Mix with Seasonings

Place the chopped carrots in a large mixing bowl and add the maple syrup, olive oil, salt, and cinnamon. Mix until all pieces are evenly coated.

You can either cook these carrots right away or cover them and allow them to marinate for up to 2 hours in the fridge. The cooking time will not change.

Oven Roasted Carrots

When you are ready to cook them, place the carrots evenly spaced on a large, parchment-lined baking sheet. Bake for 30 minutes, or until desired tenderness is achieved. Make sure to test the largest pieces with a fork as they will take the longest to cook.

Air Fryer Directions

To make this recipe in the air fryer, just place the carrots in an even layer and air fry at 400° Fahrenheit for about 20 minutes. I would suggest checking after 10 minutes as every air fryer is different!

 

How to Store Maple Roasted Carrots

  • Fridge: Serve these right away or store them in the refrigerator in an air-tight container for up to 1 week. Enjoy!

Tips for Making Maple Roasted Carrots

    • Not Vegan?  Use melted butter instead of olive oil.
    • Want to mix up the flavor? Add nutmeg, pumpkin pie spice, or any other flavors you enjoy!
