Ingredients for Chipotle Style Black Beans

  • Black Beans – Again, these are a staple in just about any plant-based diet. Feel free to mix it up and try this recipe on a different bean like pinto or kidney beans.
  • Jalapeno – You can use fresh or canned jalapenos for this recipe. Use more or less to control the spice level to your preference.
  • Chipotle in Adobo – Chipotle peppers are actually just dried jalapeno peppers. Adobo sauce is typically a mix of vinegar and spices. I find these in small canned portions at most major grocery stores.
  • Red onion – Any kind of onion works. Dice to your preferred size.
  • Spices – Paprika is a strong flavor in this recipe. It is rounded out with garlic, cumin, salt, and pepper.
  • Water or broth – The extra liquid helps soften the beans a bit as they cook down.
  • Olive oil – Used for sauteing the onion, but you can feel free to omit.

How to Make Chipotle Style Black Beans

Start by chopping the onion. Sauté the onion over medium heat with a bit of olive oil. A high-walled sauté pan is best for this recipe, as it allows you to do everything in one pan versus multiple.

Add in the jalapenos, spices, chipotle peppers, adobo sauce, black beans, and mix. Cook for about 5 minutes until the onion begins to soften.

Add in 1/2 cup of water or broth and bring the mixture to a strong simmer. Let simmer covered for about 5-10 minutes.

Once most of the liquid has cooked off and the onions are fully cooked, you’re good to go!

That’s it! Serve and enjoy!
