Ingredients
  

  • 1 can black beans
  • 1 small can diced jalapenos
  • 2 chipotle peppers + 2 tsp adobo sauce
  • 1 tbsp olive oil
  • ½ cup water or broth
  • 1 large red onion
  • 2 tsp paprika
  • 1 tsp garlic
  • 1 tsp cumin
  • ½ tsp salt
  • fresh cracked black pepper to taste

Instructions
 

  1. Start by chopping the onion. Sauté the onion over medium heat with a bit of olive oil.
  2. Add in the jalapenos, spices, chipotle peppers, adobo sauce, black beans and mix. Cook about 5 minutes until the onion begins to soften.
  3. Add in 1/2 cup of water or broth and bring the mixture to a strong simmer. Let simmer covered for about 5-10 minutes.
  4. Once most of the liquid has cooked off and the onions are fully cooked, you're good to go! That's it! Serve and enjoy!

Notes

  1. Not Vegan? Use chicken or beef broth as the liquid in this recipe. Add these black beans to a meat-based chili.
  2. Gluten-free? This recipe is already gluten-free!
  3. Oil-free? There is some oil in the adobo sauce depending on the brand you choose. Otherwise you can omit the oil used for sauteing the vegetables.
