How to Make Vegan Cauliflower Steaks
This is a detailed step-by-step guide on how to make this recipe including photographs. For the quick version, skip ahead to the recipe card below!
Preheat your oven to 400°F and line a large baking sheet with parchment paper.
Prep the Spices
First, mix all of your spices with the olive oil to create a paste. Set this aside for later.
Prep the Cauliflower
Remove the large outer leaves of the cauliflower and cut off the last 1-2 inches of the stem, leaving most of it intact. This will help the steaks stay together better once sliced.
Starting from the middle of the cauliflower, make slices from the top toward the stem to make about 1.5-inch thick steaks.
Carefully place the cauliflower slices on the parchment-lined baking sheet in a single layer.

Spice it up
Spread the spice and olive oil mixture in a thick, even layer using a brush all over the cauliflower slices. For best se the bristles to dab into the inner stems of the cauliflower.
Flip the slice and repeat.

Time to Roast
Place the sheet pan in the oven at 400 degrees Fahrenheit for 25-30 minutes or until the thickest stem of the cauliflower is fork-tender.
Serve and enjoy!
How to Store
- Make Ahead: You can coat the raw cauliflower in the oil and spice mix and refrigerate in an airtight container for several hours before roasting.
- Fridge: Store leftover cauliflower steaks in an airtight container for up to 5 days in the refrigerator.
More Tips

- Want more protein? Add 1 tbsp tahini to the spice and oil mixture before coating the cauliflower.
- Oil-free? Swap the oil for soy sauce or tahini to give the spices a way to stick to the thick slices of cauliflower.
