Vegan Rice Krispie Treats

These Vegan Rice Krispie Treats are even more gooey than the original, and oh so sweet.

Instructions
 

  1. Melt the vegan butter in a large stock pot.
  2. Once the butter is melted, add the vegan marshmallows. Stir continuously until the marshmallows have mostly melted.
  3. Once the marshmallows have melted, remove from heat. Stir in the vanilla extract and rice cereal.
  4. Mix until all of the cereal is evenly coated with the marshmallow mixture.
  5. Transfer to a lightly oiled 9x13 baking dish. Let the mixture sit for 20-30 minutes before slicing.
  6. To decorate with sprinkles, top the mixture right away before cooling. To decorate with frosting, wait until the mixture has cooled.
  7. That's it! Serve and enjoy!

Notes

  1. Not Vegan? You can use real marshmallows or real butter.
  2. Gluten-free? As long as you stick with a gluten-free variety of puffed rice cereal (and double check your butter choice), you are all set.
 
*Regular Rice Krispie Treats are not actually vegan, but there are plenty of puffed-rice cereals that are easy replacements.
