Melt the vegan butter in a large stock pot.
Once the butter is melted, add the vegan marshmallows. Stir continuously until the marshmallows have mostly melted.
Once the marshmallows have melted, remove from heat. Stir in the vanilla extract and rice cereal.
Mix until all of the cereal is evenly coated with the marshmallow mixture.
Transfer to a lightly oiled 9x13 baking dish. Let the mixture sit for 20-30 minutes before slicing.
To decorate with sprinkles, top the mixture right away before cooling. To decorate with frosting, wait until the mixture has cooled.
