  1. Preheat your oven to 350 degrees Fahrenheit and make your Vegan Graham Cracker Crust.
  2. mix the lime juice, oat milk, sugar, and corn starch in a COLD high-walled sauté pan until the corn starch is fully dissolved.
  3. Heat the mixture over medium to high heat. Stir constantly until the mixture thickens. The mixture is thick enough when it sticks to a silicone spatula when scooped. This usually takes about 10 minutes.
  4. Pour the mixture into a prepared Graham Cracker Crust.
  5. Bake at 350 degrees Fahrenheit for 15 minutes.
  6. Let cool at least 30 minutes at room temperature or in the refrigerator.
  7. Slice, serve, and enjoy!

Notes

* A note about granulated sugar: Not all granulated sugar is vegan, make sure to choose a USDA Organic variety to ensure it is not processed with bone char, an animal ingredient.
