mix the lime juice, oat milk, sugar, and corn starch in a COLD high-walled sauté panuntil the corn starch is fully dissolved.
Heat the mixture over medium to high heat. Stir constantly until the mixture thickens. The mixture is thick enough when it sticks to a silicone spatula when scooped. This usually takes about 10 minutes.
Let cool at least 30 minutes at room temperature or in the refrigerator.

Not Vegan? Use dairy milk instead of oat milk. Use butter instead of oil when making the crust.
