Ingredients for Vegan Key Lime Tart
- Vegan Graham Cracker Crust – My Vegan Graham Cracker Crust is super easy to make, it comes together in just 10 minutes. You can use a store-bought pie crust instead. Any crust will work, but the rich graham cracker flavors really compliment the powerful lime.
- Lime Juice – Fresh lime juice is best, but bottled will work in a pinch.
- Sugar – A note about granulated sugar: Not all granulated sugar is vegan, make sure to choose a USDA Organic variety to ensure it is not processed with bone char, an animal ingredient.
- Corn starch – This acts as the thicker for this key lime tart and helps it to set when cooling.
- Oat Milk – Any plant milk will work to mellow the powerful flavor of the lime.
- Lime Zest – This is super important, especially if you are using bottled lime juice. You don’t want to miss out on any of that great lime flavor.
How to Make Vegan Key Lime Tart
Preheat your oven to 350 degrees Fahrenheit and make your Vegan Graham Cracker Crust.

First, mix the lime juice, oat milk, sugar, and corn starch in a COLD high-walled sauté pan until the corn starch is fully dissolved. If you try to heat the mixture before the corn starch has fully dissolved, it will become clumpy and you’ll have to strain out the clumps. Yuck.

Once the corn starch is fully dissolved, heat the mixture over medium to high heat. Stir constantly until the mixture thickens. The mixture is thick enough when it sticks to a silicone spatula when scooped. This usually takes about 10 minutes.
Pour the mixture into a prepared Graham Cracker Crust.
Bake at 350 degrees Fahrenheit for 15 minutes. The mixture should begin to bubble around the edges and the Graham Cracker Crust will reach a deep golden-brown.

Let cool at least 30 minutes at room temperature or in the refrigerator. Slice, serve, and enjoy!
