One-Pot Vegan Spaghetti

Ingredients
  

  • 1 lb thin spaghetti (or any other noodle)
  • 1 zucchini
  • 1 shallot
  • 6 oz can sliced mushrooms
  • 15 oz can diced tomatoes
  • 2 tbsp Italian seasoning
  • 2 tsp olive oil
  • Salt & pepper

Instructions
 

  1. Add all veggies and herbs into a large pot with a bit of olive oil.
  2. Sauté until tender.
  3. Add 3 cup of water or vegetable broth and bring to a boil.
  4. Add pasta, cover. Cook noodles per package instructions, stirring occasionally to prevent sticking.
  5. Enjoy!
