Start by removing the pit from the dates if you did not purchase them already pitted.
Melt the chocolate chips either by microwaving in 30-second increments or using a double boiler on the stovetop. Once the chocolate has melted, set it aside to cool for 1-2 minutes.
While the chocolate is melting, crush the peanuts using the back of a measuring cup or glass. Set them aside.
Slice the dates length-wise and butterfly them open on a freezer-safe plate. Fill the inside of each date with peanut butter, then roll them in the crushed peanuts. Make sure to leave a few pieces of crushed peanut to garnish the top.
Next, dip the stuffed dates in the melted chocolate using a fork to turn it until it is fully covered. Place the chocolate-covered dates back onto the freezer-safe plate and sprinkle with the remaining crushed peanuts.
Place the plate of dates in the freezer for 20 minutes. After the chocolate has set, serve and enjoy!
Notes
Not vegan? Use regular dairy chocolate chips or add honey to the peanut butter.
Peanut-free? Replace the peanut butter with almond or cashew butter and sprinkle a chopped nut of choice on top. For entirely nut-free, replace the peanut butter with sun butter and top with chopped sunflower seeds or leave plain.
Gluten-Free? As long as you choose a certified gluten-free peanut butter and chocolate chip, you are good to go.
