Ingredients

Instructions

  1. Start by removing the pit from the dates if you did not purchase them already pitted.
  2. Melt the chocolate chips either by microwaving in 30-second increments or using a double boiler on the stovetop. Once the chocolate has melted, set it aside to cool for 1-2 minutes.
  3. While the chocolate is melting, crush the peanuts using the back of a measuring cup or glass. Set them aside.
  4. Slice the dates length-wise and butterfly them open on a freezer-safe plate. Fill the inside of each date with peanut butter, then roll them in the crushed peanuts. Make sure to leave a few pieces of crushed peanut to garnish the top.
  5. Next, dip the stuffed dates in the melted chocolate using a fork to turn it until it is fully covered. Place the chocolate-covered dates back onto the freezer-safe plate and sprinkle with the remaining crushed peanuts.
  6. Place the plate of dates in the freezer for 20 minutes. After the chocolate has set, serve and enjoy!

Notes

  • Not vegan? Use regular dairy chocolate chips or add honey to the peanut butter.
  • Peanut-free? Replace the peanut butter with almond or cashew butter and sprinkle a chopped nut of choice on top. For entirely nut-free, replace the peanut butter with sun butter and top with chopped sunflower seeds or leave plain.
  • Gluten-Free? As long as you choose a certified gluten-free peanut butter and chocolate chip, you are good to go.
