Ingredients

  • Dates – Large medjool dates are the best for this recipe. You can buy them with the pit already removed at most grocery stores. If you can’t find those, you can easily remove the pit yourself.
  • Peanut Butter – Again, any nut butter will work here. I am partial to creamy peanut butter, but you can use chunky, too.
  • Peanuts – Give them a quick crush with the back of a measuring cup and you’re good to go.
  • Vegan Chocolate Chips – I use Enjoy Life Dark Chocolate Morsels. Not sponsored, I just love them. They’re delicious, and they melt easily without the addition of oil as some recipes call for when melting vegan chocolate.

How to Make Crunchy Peanut Butter Stuffed Dates

Start by removing the pit from the dates if you did not purchase them already pitted.

Melt the chocolate chips either by microwaving in 30-second increments or using a double boiler on the stovetop. Once the chocolate has melted, set it aside to cool for 1-2 minutes.

While the chocolate is melting, crush the peanuts using the back of a measuring cup or glass. Set them aside.

Slice the dates length-wise and butterfly them open on a freezer-safe plate. Fill the inside of each date with peanut butter, then roll them in the crushed peanuts. Make sure to leave a few pieces of crushed peanut to garnish the top.

Once the dates are stuffed, dip them in the melted chocolate using a fork to turn the date until it is fully covered. Place the chocolate-covered dates back onto the freezer-safe plate and sprinkle with the remaining crushed peanuts.

Place the plate of dates in the freezer for 20 minutes.

After the chocolate has set, serve and enjoy!

How to Store

  • Fridge or Freezer: Store any leftover dates in the fridge or freezer. They’ll last up to a week in the fridge and up to 3 months in the freezer.
