These Chickpea Tacos are hearty and flavorful with the perfect amount of crunch. Topped with your favorite toppings, they're the perfect vegan option for your taco bar!
Drain and rinse one can of chickpeas. Pat dry with a towel and set aside.
Toss chickpeas in a bowl with olive oil and taco seasoning.
Place on a parchment-lined baking sheet and bake for 45 minutes at 350 deg Fahrenheit. Toss every 15 minutes or so.
While the chickpeas cook, prepare your veggies and other toppings.
Once the chickpeas are cooked and cooled, fill your taco tortillas with the chickpeas and top with the cabbage mixture.
Garnish with vegan chipotle lime aioli if desired.
