These Vegan Loaded Sweet Potatoes bring together some of my favorite dishes and stuff them into one protein-packed meal.

You’ll be stuffing these baked sweet potatoes with Air Fried Black Beans and topping them with Corn Salsa and Avocado Lime Crema.

Ingredients For Vegan Loaded Sweet Potatoes

  • Sweet Potatoes – I love sweet potatoes, but you can absolutely make this recipe with your classic baked russet potato.
  • Corn Salsa – Fresh corn, shallots, jalapenos, cilantro, lemon & lime juices, and salt & pepper make up my simple corn salsa recipe. You can use store-bought corn salsa or even just plain corn would be delicious.
  • Vegan Avocado Lime Crema – This sauce whips together easily with some avocado, vegan mayo, and spices.
  • Air Fried Black Beans – These black beans are my chosen protein for this recipe just because I think the flavors blend well. You can use whatever base you’d like.

How to Make Vegan Loaded Sweet Potatoes

Preheat the oven to 400 degrees Fahrenheit.

Prepare the sweet potatoes by washing them and patting them dry. Pierce each sweet potato 8-10 times with a fork. Place them on a parchment-lined baking sheet and roast at 400 degrees Fahrenheit for 40-45 minutes or until they are fork-tender.

While the sweet potatoes roast, you’ll make the corn salsaair-fried black beans, and avocado lime crema.

To make the corn salsa, add all ingredients into a mixing bowl and stir until evenly coated.

To make the avocado lime crema, add all ingredients into a blender and mix until smooth. If you do not have a blender, omit the spinach used in the recipe and mash everything together with a fork or potato masher until smooth.

To make the air-fried black beans, rinse and drain your black beans, then toss them in olive oil and taco seasoning. Air fry at 400 degrees F for 8-12 minutes. If you do not have an air fryer, you can roast them in the oven on a parchment-lined baking sheet for 15-20 minutes or until crispy.

Once the sweet potatoes are roasted, remove them carefully from the oven and let them cool for a few minutes. Slice each potato down the center then grab each end and press them together toward the center to create a bowl for the stuffing. You can mash the sweet potato gently with a fork before stuffing if you prefer.

Pile in the black beans, and corn salsa, and top with the avocado crema.

  • Fridge: If you have any leftovers they will keep in the fridge for 3-5 days when stored in an air-tight container.

  4. Next, make the corn salsa by adding all ingredients into a mixing bowl and mix.
  5. Carefully remove the potatoes from the oven. Slice down the middle to open. Mash gently with a fork.
  6. Add the air fried black beans, corn salsa, and top with the avocado lime crema.
  7. Enjoy!
