Vegan Frankenstein Rice Krispie Treats

These Vegan Frankenstein Rice Krispie Treats are one of my favorite Halloween treats ever. They’re SO easy to make, super fun for kids, and best of all – this simple Halloween dessert is super allergy-friendly! These spooky monsters are vegan, gluten-free, and nut-free, making them a great option for Halloween party treats.

These monsters are a variation of my classic Vegan Homemade Rice Krispie Treats recipe. They ARE a bit misnamed tho. The popular Rice Krispie cereal that is typically used to make these treats is not actually vegan – it uses an animal source of Vitamin D3. So, I use a vegan rice cereal instead, but ‘Frankenstein Rice Krispie Treats’ sounds better than ‘Frankenstein Vegan Puffed Rice Cereal Treats’… so here we are.

Ingredients

  • Vegan marshmallows – I prefer Dandie’s Vegan Mini Marshmallows so they melt a bit quicker, but the full-sized marshmallows work too.
  • Vegan Butter – Any variety of non-dairy vegan butter works fine here. Make sure to double-check ingredients to meet your specific dietary restrictions.
  • Rice Cereal – As mentioned above, name-brand Rice Krispies are not vegan. Just double-check that all ingredients are vegan for whichever rice cereal you buy if that is important to you!
  • Pure Vanilla extract – Adds a bit of flavor to the entire mix.
  • Green food coloring – Any brand works. I prefer a more neon-green color instead of forest green, but you do you!
  • Black frosting/icing – I used black decorator frosting for the monster’s hair and a fine-tipped black decorator icing for the other details. You can purchase vegan varieties of these at your grocery store, or use black food coloring to dye your own and apply with piping bags.
  • Candy eyes – Any size works! Again, make sure to check ingredients to make sure they meet your specific needs.

Making Frankenstein Treats

First, melt vegan the butter in a large stock pot. Once the butter is melted, add the vegan marshmallows and green food coloring. Stir continuously until the marshmallows have mostly melted and the food coloring is evenly distributed. You will have some chunks left, that’s ok! Vegan marshmallows do not always fully melt.

Once the marshmallows have melted, remove from heat. Stir the vanilla extract and rice cereal into the melted marshmallow. Mix until all of the cereal is evenly coated with the marshmallow mixture.

Transfer the mixture to a lightly-oiled 9×13 baking dish. It is super helpful if you have a baking dish with a lid to make for easy storage. Let the mixture sit for 20 minutes before slicing.

Now for the Frankenstein Design…

Once the treats have cooled and firmed, slice them into 16 even sections. Remove the sections and place them on parchment paper or silpat.

Use an icing spatula to spread the black icing over the top 1/4 of the treat in a rectangular and slightly uneven pattern. This is the monster’s hair.

Use the fine-tipped decorator icing to make the mouth and two small dots to help the candy eyes adhere.

You can make these happy Frankenstein monsters or grumpy or whatever you please!

That’s it! Place the treats back in the baking dish for transport and/or storage, or straight onto a serving tray to enjoy!

Variations on Frankenstein Rice Krispie Treats

There are lots of fun ways to make these spooky Halloween Monsters your own!

Add chocolate sprinkles on top of the black icing for more texture to your monster’s hair. OR, dip the treats in melted vegan chocolate to make the hair instead of icing.

Serve these treats on lollipop sticks for a less-sticky experience for little ones.

Use vegan mini marshmallows for eyes instead of candy eyes.

Of course, you can mix it up entirely and use different colored food dyes to make these monsters of all sorts!

  • Room-Temp: Store at room temperature for 3-5 days in an air tight container.

More Tips

  • Not Vegan? Go with the traditional ingredients of regular marshmallows (I still recommend the minis for easier melting) and regular butter. Use melted dairy chocolate for the hair if desired.
  • Gluten-free? Just double-check your frosting choices and you’re all set!

Why aren’t traditional marshmallows vegan?

Traditional marshmallows contain gelatin which is an an animal-derived ingredient.

What other monsters can I make out of these treats?

Dip the whole thing in vegan white chocolate and use the candy eyes to make spooky ghosts. Opt for a purple food coloring and any colored icing for dots to make a more colorful monster! Get creative!
