Roasted Acorn Squash Seeds

Did you know you could roast acorn squash seeds just like pumpkin seeds? Yup! These Roasted Acorn Squash seeds taste almost identical to roasted pumpkin seeds in my opinion.

I love making dishes with acorn squash (like my Vegan Stuffed Acorn Squash with Wild Rice) because it means I get to have these Roasted Acorn Squash Seeds as a snack too!

Why You’ll Love Roasted Acorn Squash Seeds

  • Easy â€“ This snack is so easy to make and it is ready in under 30 minutes.
  • Customizable â€“ Add spices like taco seasoning or garlic and onion powder to mix up the flavors for these roasted acorn squash seeds.
  • Low-waste â€“ Instead of just throwing out the guts next time you cook acorn squash, turn them into this delicious snack!

Ingredients

Acorn squash seeds & salt â€“ Yep, that’s it. Just two ingredients. You can give the seeds a quick spray with olive oil, but they don’t need it for the salt to stick.

Helpful Equipment

In addition to measuring cups and spoons, the following equipment is helpful for this recipe:

  • Large baking sheet
  • Parchment paper (optional) – I use this for easier clean up, but you can roast these seeds right on the baking sheet.
  • Colander or strainer

How to Make Roasted Acorn Squash Seeds

Preheat your oven to 325 degrees Fahrenheit.

Start with fresh acorn squash. Cut the squash open and use a spoon or ice cream scoop to remove the guts and seeds.

Using a colander or strainer, wash the guts away from the seeds, making sure to detach all pieces.

Lay the seeds on a towel and pat dry.

Roast for 15-20 minutes at 325F or until slightly golden brown.

Let cool slightly and enjoy!

How to Serve Roasted Acorn Squash Seeds

Eat these roasted acorn squash seeds on their own as a delicious snack, or sprinkle them in your oatmeal or on top of your Stuffed Acorn Squash for some added protein.

How to Store Roasted Acorn Squash Seeds

  • Room Temp: Store loosely covered at room temperature for up to 1 week.
