- Strawberries – Fresh strawberries are best for this recipe, but you can use frozen as well. If you do use frozen berries, your cooking times will increase and you may need to adjust the liquid down.
- Sugar – Regular granulated cane sugar is the easiest option for this recipe, but you can sub maple syrup if you are looking for a refined-sugar-free option.
- Lemon Juice – This helps balance the sweetness of the strawberries and sugar, but you can easily sub with water if you don’t have lemon juice on hand.
- Cornstarch – Cornstarch is not necessarily a traditional element in compote, but I like my compote to be a little thicker, so I add just a touch of cornstarch. Feel free to omit if desired.
How to Make Easy Strawberry Compote
To start, wash the strawberries and remove the stems. Chop the strawberries to desired size and shape. This may look different depending on why you are making the compote. I tend to prefer cube-shaped pieces, but you can certainly do thin slices instead.
Add the strawberries, sugar, lemon juice, and cornstarch into a small, cold sauce pan. Mix until the cornstarch is fully dissolved.
If you wait to mix the cornstarch until the mixture is hot, it will form major clumps that you will have to strain out.

Bring the mixture to a strong simmer over medium-high heat and let simmer for 5 minutes, stirring constantly, until the mixture thickens and the strawberries are tender.
That’s it! You can serve this compote after letting it cool 1-2 minutes, or let cool fully for a cold dish like ice cream. Enjoy!
