Equipment

  • Pasta maker Helpful if you want to make different shapes like rigatoni or fusilli.
  • Rolling Pin You'll need this if you want to make a long noodle and do not have a pasta maker.
  • Plastic wrap Optional
  • Sharp knife

  1. Mix both flours and salt on a clean working surface and make a well in the center.
  2. Slowly add the water and olive oil. Use a fork to draw flour to the middle to begin to mix. Mix until a cohesive dough has formed, with no streaks of flour.
  3. Knead 5-10 minutes until dough is elastic.
  4. Place the dough in a bowl in the fridge covered with damp paper towel for 30 min.
  5. Remove the dough from the fridge and knead for 5 more minutes.

Pasta Maker Instructions

  1. Divide the dough into 8-10 sections.
  2. Set the pasta maker to your desired noodle size and shape.
  3. Feed the pasta maker one section of dough at a time.
  4. Cut the dough once the noodle has reached the desired length/size for your chosen shape.

Cooking the Pasta

  1. Fresh pasta: Boil for 1 minute.
  2. Dried for 4-8 hours: Boil for 2 minutes.
  3. Dried for 24 hours: Store up to 1 month. Boil for 3-5 minutes.
