Vegan Cinnamon Raisin Bread

This Cinnamon Raisin Bread requires no kneading and no overnight rise. It is the perfect amount of sweetness mixed with savory cinnamon.

Make the Dough

  1. Add the flour, yeast, and salt into a large mixing bowl and combine.
  2. In a separate small bowl, mix the warm water and brown sugar until the sugar is fully dissolved. The water should be just shy of hot to the touch.
  3. Add the sugar-water mixture into the mixing bowl, and mix until a dough is formed and no streaks of flour remain. This should take less than a minute.

First Rise

  1. Once the dough is formed, cover it with a kitchen down or bowl cover and let it rise in a warm place (at least 68F) in your kitchen for 3 hours.

Inclusions

  1. Once the dough has doubled, turn it out on a lightly-floured working surface.
  2. To perform the cinnamon-raisin-sugar inclusions, first you will mix 1/2 cup brown sugar, 1 tbsp cinnamon, and 1/3 cup raisins in a small mixing bowl.
  3. Once the dough is turned out onto the working surface, stretch it until it forms a rough rectangle about 1.5" thick.
  4. Spread the inclusions over the rectangle.
  5. Next, you will fold the dough in thirds "hotdog-style" or length-wise. This will form a rough-looking skinnier rectangle. Spread the remaining inclusions on top of this rectangle.

Second Rise

  1. Next, roll up the rectangle into a loaf-shape as though you are rolling up a sleeping bag.
  2. Place the loaf into a lightly-oiled or parchment-lined bread pan and let it rise for 1 more hour.
  3. Preheat your oven to 375 degrees Fahrenheit.

Time to Bake

  1. Place the loaf in the oven and let bake at 375 F for 45-50 minutes or until the internal temperature is at least 207 degrees Fahrenheit.
  2. Remove the bread from the oven and remove the loaf from the bread pan. Allow the loaf to cool on a cooling rack for at least 1 hour before slicing.
  3. That's it! Slice, serve, and enjoy!

Notes

    • Not Vegan? You can use warm milk in the dough to replace the water. The temperature rules still apply for the milk activating the yeast, so be sure to warm it first.
    • Gluten-free? I have not attempted this recipe with gluten-free flour yet, but if you do, let me know how it works out!
    • Mix it up! If you want different inclusions, feel free to mix up the flavor combos. Add chocolate chips or dried blueberries instead for a twist on this bread.
*A note about granulated sugar: Not all granulated sugar is vegan. Make sure to choose a USDA Organic variety (or variety otherwise noted to be vegan) to ensure it is not processed with bone char, an animal ingredient.
