  • 3 large bananas
  • 2 ½ cup all-purpose flour
  • cup neutral oil (canola or avocado)
  • ¾ cup granulated sugar*
  • cup unsweetened applesauce
  • 2 tsp vanilla extract
  • 2 tsp baking powder
  • 2 tsp baking soda
  • ¼ tsp salt
  • 2 tsp cinnamon
  • cup chopped walnuts (plus more for topping)
  • ½ - 1 cup vegan frosting (optional)

Instructions
 

  1. Preheat the oven to 350 degrees Fahrenheit.
  2. In a large mixing bowl, mash the bananas. Add sugar and remaining wet ingredients. Mix until evenly combined.
  3. Add the flour, baking powder, baking soda, salt, cinnamon, and chopped walnuts to the wet ingredients. Mix until no streaks of flour remain.
  4. Pour the batter into a large baking dish and level with a spatula.
  5. Bake 350F for 30-35 minutes or until an inserted toothpick comes out clean.
  6. Remove the cake from the oven. Let cool slightly before serving.
  7. If you are frosting the cake, let it cool fully before frosting and topping with crushed walnuts.
  8. Enjoy!

Notes

*A note about granulated sugar: Not all granulated sugar is vegan, make sure to choose a USDA Organic variety to ensure it is not processed with bone char, an animal ingredient.
**Nutrition information is for 1/12th of the cake without frosting.
 
  • Not Vegan? You can swap the oil for melted butter.
  • Nut-free? Swap the walnuts for pumpkin seeds or omit entirely and the cake is just as delicious.
  • Gluten-free? Swap a 1:1 gluten-free baking flour replacement and you're all set!
