  1. Wash, peel, and shred your carrots if you are not starting with pre-shredded carrots. Place them in a large mixing bowl.
  2. Chop the parsley, leaving out the large stems, and add it to the bowl with the carrots.
  3. Put all the vinaigrette ingredients in a blender and pulse until smooth. Pour the dressing into the bowl with the carrots and parsley. Mix until evenly coated.
  4. Serve this salad at room temperature or chilled.
