These Grilled Vegetable Kebabs are made with an array of colorful summer veggies and marinated in a spicy Shawarma spice blend.

- 1 medium zucchini
- 1 medium yellow squash
- 1 medium red bell pepper
- 1 medium orange bell pepper
- ½ large large red onion
- 2 cups baby bella mushrooms stems removed
For the Shawarma Marinade

Make the Marinade
Combine the Shawarma spice blend and olive oil and mix until smooth. Set aside.
Make the Skewers
Wash and chop all vegetables to roughly even sized pieces.
Pour the Shawarma marinade over the vegetables and mix until all of the vegetables are evenly coated.
Place the vegetables on skewers in desired pattern.
Grill over medium heat for 15-20 minutes or until desired level of doneness for vegetables.

*If you are using wooden skewers for these kebabs, make sure to soak them in water for 15 minutes prior to use to avoid splinters.
