  1. Preheat your oven to 350 degrees Fahrenheit.
  2. Add the sugar, oil, and lemon extract into a large mixing bowl and mix until the sugar begins to dissolve.
  3. In a separate bowl, mix the flour, salt, and baking soda.
  4. Add the dry ingredients to the bowl with the oil and sugar mixture and mix. The dough will still look very dry.
  5. Add the lemon juice and oat milk until a wet but not sticky dough is formed.
  6. Scoop the dough into evenly-sized balls and place them onto a parchment-lined baking sheet.
  7. Flatten each dough ball using the bottom of a measuring cup.
  8. Bake at 350 F for 12-15 minutes.
  9. Let cool and enjoy!

Notes

    1. Not Vegan? Use 1/2 cup of real butter instead of oil. Use dairy milk instead of plant-milk.
    2. Gluten-free? Opt for a 1:1 gluten-free flour and you're all set!
 
*A note about granulated sugar: Not all granulated sugar is vegan. Make sure to choose a USDA Organic variety (or variety otherwise noted to be vegan) to ensure it is not processed with bone char, an animal ingredient.
