Preheat the oven to 325 degrees Fahrenheit.
Add the flour, powdered sugar, brown sugar, salt, and cinnamon into a large mixing bowl and mix until evenly distributed.
Add the vegan butter and vanilla extract and mix until a dry, but not crumbly dough has formed.
Take the ball of dough and turn it out onto a lightly-floured working surface.
Lightly flour the top of the dough and your rolling pin. Roll the dough until flat and about 1/2 inch thick.
Use your desired size and shape cookie cutter to cut as many cookies as you can from the flat sheet of dough. Repeat until all dough is used.
Place the cookies on a parchment-covered baking sheet and bake for 12-15 minutes at 325 degrees Fahrenheit.
Let the cookies cool on the baking sheet as they will continue to firm up as they cool.
