This pasta is made with marinated artichoke hearts and tender baby spinach. It gets its creamy texture from vegan parmesan cheese and just a bit of non-dairy milk. With so few ingredients, you really can’t go wrong with this pasta.
This recipe is also a great way to use up leftover spinach from the fridge. We always seem to be racing the clock on wilting spinach in our house…

Ingredients
- Artichokes – I use artichokes that have been marinated in an olive oil and spice mix to add flavor to this recipe. You can easily use canned artichokes and add spices like garlic, onion powder, parsley and other dried herbs to add flavor.
- Spinach – I prefer to use fresh spinach, but frozen will work in a pinch.
- Pasta – I used casarecce noodles, but you can use any pasta shape you want.
- Vegan Parmesan cheese – This is the key ingredient to make the creamy sauce for this pasta. You can use vegan mozzarella cheese as well, but I think the vegan parmesan gives the best flavor.
- Non-dairy milk – I used oat milk for this recipe, but you can use whatever non-dairy milk you prefer.
- Sea salt & black pepper – Combined with the oat milk and vegan parm to make the creamy sauce, but also used to garnish the dish
- Optional: Lemon juice or lemon zest to garnish.

How to Make Creamy Vegan Spinach Artichoke Pasta
First, bring a large pot of water to a boil. Once the water is boiling, add the pasta and cook it per package directions until al dente.
If you don’t know what al dente is: The pasta should be firm but chewy. There are few things in the food worlds worse than mushy overcooked pasta!
While the pasta cooks, gather the sauce ingredients. Add the non-dairy milk, vegan parmesan cheese, salt, and pepper to a sauté pan. Cook over medium heat until the cheese melts.
Add the chopped artichokes and fresh spinach. Continue to cook over medium heat until the spinach is fully wilted.

To thin the sauce slightly, add 1/4 cup of the pasta water or vegetable broth.
You can leave the sauce as is or use an immersion blender to pulse the larger chunks of artichoke.
If you want a pureed sauce, consider placing all ingredients in a food processor or high speed blender.
Once the sauce is finished, remove the sauté pan from heat. Strain the cooked pasta and add it to the sauté pan, stirring until all of the pasta is coated in the sauce.

For a thicker, creamier sauce with more protein, consider pureed silken tofu or white beans added to the mix.
